Nutty Rice

Nutty Rice  (From Gretchen)

 

Ingredients

1 cup long grain rice

1 T ghee

1 clove garlic, minced

1 t coriander seeds

6 cardamon pods

1 cinnamon stick

1.5 cups boiling water

3 T raisins

3 T roasted unsalted cashews

 

Cook rice.  Rinse under cold water until it runs clear.  Drain well.

Heat ghee in medium saucepan.

Add garlic, coriander seeds, cardamon pods and cinnamon stick. 

Cook, stirring over low heat for two minutes.

Add rice to saucepan on stove.  Stir until rice is coated with ghee and spices.

Add boiling water.  Stir rice with spoon.

Cover saucepan with tight fitting lid and reduce heat to lowest setting.

Steam for about 15 minutes until water is absorbed and rice is tender.

Remove saucepan from head and remove the lid.

Discard cinnamon stick.  Stir rice with a fork.

Let rice stand for two minutes.

Stir in raisins and cashews.
