
Ingredients:
1/2 c. veg. oil
1 tsp. grated lemon rind
3 tablespoons lemon juice
1 clove garlic
2 tsp. salt
2 tsp. dijon-style mustard
1 can chick peas, drained
1 pkg. (10 oz.) frozen baby lima beans, thawed
1 cup chopped red pepper
1/2 cup chopped red onion
8 oz. cubed mozzarella cheese
3 tomatoes, chopped
Greek or black olives
Directions:
1. Combine oil, lemon rind, juice, garlic, salt & mustard. Shake and blend into dressing.
2. Combine vegetables in bowl.
3. Pour dressing over vegetables. Toss to coat well. Cover and chill. Garnish with olives.
