Red Lentil Soup
2 Cups Ziyad Red Lentils
8 Cups of Water or Vegetable Broth
1/2 tsp. Cumin
1/2 tsp. Turmeric
1 Large Onion, Diced
1-2 Cloves of Garlic, Minced
2 tbsp. Olive Oil (EVOO )
Salt & Pepper to Taste
Juice of 1 Lemon
2 Bullion Cubes of Choice (optional)
Preparation Time: 40 Minutes 1.) Wash lentils. Add to broth and bring to a boil, cover for one half hour, stirring occasionally. 2.) When lentils are tender, add dry spices and bullion (optional) to the pot. 3.) Saute the onions and garlic in a frying pan with olive oil, when golden brown, add to soup mixture. 4.) Simmer for 5 minutes. Turn off heat and add lemon juice to pot, sitr. Ladle soup into bowls. 5.) Garnish with parsley and paprika. Serve with lemon wedges on the side. 6.) Eat!!!
