Crabby Joe’s

A variation on the classic crab cake.

A favorite recipe from Brad Davies via his Aunt Carol & Aunt Linda.

Serves: 6-8

Tip: The ingredients can be assembled and then frozen ahead of time and then broiled at party time.

Ingredients

1 pack English Muffins: split and toasted

1 stick butter at room temperature

1 jar Kraft Old English Cheese Spread at room temperature (This can be found in the dairy case, though I have and some difficulty finding it.  To avoid this, I often have Amanda do the shopping.)

1½ tsp. mayo

 ½ tsp. garlic salt

 ½ tsp. seasoned salt (i.e. Lawry’s)

1 can crab meat (drained) (It looks like a tuna can.)

Recipe:

1. Mix all ingredients (except the muffins, of course) with a mixer.

2.      Spread thickly on the 12 toasted English muffin halves.

3. Broil until bubbly and cut into quarters.

4.     Serve.

OR freeze on a plate.  When frozen solid you can stack them in a freezer bag.  You can broil when mostly frozen.

P.S. The picture is stolen from the “Internet” and appears to include a slight variation of green onions.  I have never tried that.
